Almond Flour Lemon Blueberry Muffins

Delicious almond flour muffins bursting with lemon and blueberry flavors. Perfect for a healthy snack!

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix almond flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk together eggs, honey, melted coconut oil, lemon juice, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and mix until just combined.
  5. Gently fold in the blueberries.
  6. Pour the batter into prepared muffin tins, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

  • For added flavor, zest one lemon and mix it into the batter.
  • These muffins freeze well for up to 3 months.
