  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup peeled and diced apples
  • 1/2 cup brown sugar
  • 1/4 cup rolled oats
  • 1/2 teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the melted butter, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients, then fold in the diced apples.
  5. In a separate bowl, mix the brown sugar, oats, and nutmeg for the streusel topping.
  6. Fill the muffin cups with batter and sprinkle the streusel topping on each muffin.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

  • For a sweeter muffin, add more sugar to taste.
