  • 1/2 cup unsalted butter, melted

  • 4 large eggs
  • 16 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 2 cups diced apples
  • 1 teaspoon cinnamon
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
  3. In another bowl, beat sugar and cream cheese until smooth. Add eggs one at a time, then stir in vanilla.
  4. Spread the cream cheese mixture over the crust in the pan.
  5. In a separate bowl, mix diced apples with cinnamon and set aside.
  6. In a third bowl, combine oats, brown sugar, and flour to form the crisp topping.
  7. Layer the apple mixture over the cheesecake filling, then add the crisp topping.
  8. Bake for about 50-60 minutes, until set. Let cool before serving.
