1 1/2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1 cup sugar
4 large eggs
16 ounces cream cheese, softened
1 teaspoon vanilla extract
2 cups diced apples
1 teaspoon cinnamon
1 cup rolled oats
1/2 cup brown sugar
1/2 cup all-purpose flour
Instructions
Preheat the oven to 325°F (160°C).
In a bowl, mix graham cracker crumbs and melted butter, then press into the bottom of a springform pan.
In another bowl, beat sugar and cream cheese until smooth. Add eggs one at a time, then stir in vanilla.
Spread the cream cheese mixture over the crust in the pan.
In a separate bowl, mix diced apples with cinnamon and set aside.
In a third bowl, combine oats, brown sugar, and flour to form the crisp topping.
Layer the apple mixture over the cheesecake filling, then add the crisp topping.
Bake for about 50-60 minutes, until set. Let cool before serving.
