  • 2 cups Biscoff cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup heavy whipping cream
  • 1/2 cup Biscoff spread

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix Biscoff cookie crumbs with melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth. Add vanilla and mix well.
  4. Add the eggs one at a time, mixing well after each addition.
  5. In another bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  6. Pour the cream cheese mixture over the crust in the springform pan.
  7. Spoon dollops of Biscoff spread on top and swirl with a knife for decoration.
  8. Bake for about 50-60 minutes, or until the center is set but slightly jiggly.
  9. Allow to cool at room temperature, then refrigerate for at least 4 hours or overnight before serving.

  • Allow the cheesecake to cool completely before refrigerating for best results.
  • Top with whipped cream and additional Biscoff spread for an extra touch.
