Broccoli and Cheddar Twice-Baked Potatoes

These delicious twice-baked potatoes are stuffed with creamy broccoli, cheddar cheese, and crispy turkey bacon.

  • 4 large russet potatoes
  • 2 cups chopped broccoli
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked turkey bacon, crumbled
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork. Bake for 45-60 minutes until tender.
  3. Meanwhile, steam the broccoli until bright green and tender.
  4. Once the potatoes are done, let them cool slightly, then cut them in half and scoop out the insides into a mixing bowl.
  5. Add the broccoli, cheddar cheese, turkey bacon, sour cream, milk, garlic powder, salt, and pepper to the bowl. Mix until creamy and well combined.
  6. Stuff the potato skins with the mixture, mounding it on top.
  7. Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes until heated through and the tops are golden.

Notes

  • For a vegetarian version, omit turkey bacon or substitute with a plant-based bacon.
