Broccoli and Cheddar Twice-Baked Potatoes with Flavorful Turkey Bacon

- 4 large russet potatoes
- 2 cups chopped broccoli
- 1 cup shredded cheddar cheese
- 1/2 cup cooked turkey bacon, crumbled
- 1/2 cup sour cream
- 1/4 cup milk
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork. Bake for 45-60 minutes until tender.
- Meanwhile, steam the broccoli until bright green and tender.
- Once the potatoes are done, let them cool slightly, then cut them in half and scoop out the insides into a mixing bowl.
- Add the broccoli, cheddar cheese, turkey bacon, sour cream, milk, garlic powder, salt, and pepper to the bowl. Mix until creamy and well combined.
- Stuff the potato skins with the mixture, mounding it on top.
- Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes until heated through and the tops are golden.
Notes
- For a vegetarian version, omit turkey bacon or substitute with a plant-based bacon.
