- 1 cup dates, pitted and chopped
- 1 teaspoon ground cardamom
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup milk
- Preheat the oven to 350°F (175°C) and grease a cake pan.
- In a bowl, mix the chopped dates with the baking soda and enough boiling water to cover. Let it sit for 10 minutes.
- In a separate bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla.
- In another bowl, whisk together the flour, baking powder, salt, and cardamom.
- Gradually add the dry ingredients to the wet mixture, alternating with milk.
- Fold in the date mixture until combined.
- Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
