  • ½ cup unsalted butter, melted
  • 4 (8 ounces) packages cream cheese, softened
  • 1 cup sugar
  • 4 large eggs
  • 1 cup sour cream
  • ⅔ cup key lime juice
  • 1 tablespoon lime zest

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  4. Stir in sour cream, key lime juice, and lime zest until well combined.
  5. Pour the cheesecake batter over the crust in the springform pan.
  6. Bake for approximately 1 hour or until the center is set but slightly jiggly.
  7. Turn off the oven and let the cheesecake cool in the oven with the door ajar for about 1 hour.
  8. Refrigerate for at least 4 hours or overnight before serving.
