Chicken Normandy or French Apple Cider Chicken

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 2 apples, peeled and sliced
  • 1 cup apple cider
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken thighs with salt and pepper and add them to the skillet.
  3. Brown the chicken on both sides, about 5-7 minutes per side.
  4. Remove the chicken and set aside.
  5. Add the sliced onion and apples to the skillet, sauté until soft.
  6. Add the apple cider and thyme, then return the chicken to the skillet.
  7. Reduce heat to low, cover, and simmer for 30 minutes.
