  • 4 cups chicken broth
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons parsley, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrot, and celery; sauté until soft.
  3. Stir in the garlic, salt, and pepper, cooking for an additional minute.
  4. Add the chicken broth and bring to a boil.
  5. Once boiling, add the pastina and cook according to package instructions.
  6. Remove from heat and stir in chopped parsley before serving.
