Classic Mexican Street Corn Off the Cob

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon chili powder
  • 1/2 cup cotija cheese, crumbled
  • 2 tablespoons lime juice
  • 1/4 cup cilantro, chopped

Instructions

  1. Grill the corn until slightly charred, about 10 minutes, turning occasionally.
  2. Allow corn to cool before cutting the kernels off the cob.
  3. In a bowl, mix together mayonnaise, sour cream, chili powder, lime juice, and half the cotija cheese.
  4. Add the corn kernels to the mixture and stir to combine.
  5. Top with remaining cotija cheese and cilantro before serving.
