  • 2 cups sweet corn, fresh or frozen
  • 1 salmon fillet
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Cook the orzo according to package instructions. Drain and set aside.
  2. In a skillet, heat butter and olive oil over medium heat. Add the garlic and sauté until fragrant.
  3. Add the corn and cook for a few minutes until tender.
  4. Pour in the heavy cream, salt, and pepper, stirring to combine.
  5. Add the cooked orzo and stir well. Let it simmer for a few minutes.
  6. Meanwhile, season the salmon fillet with salt and pepper and cook it in a separate pan until cooked through.
  7. Flake the salmon and gently fold it into the orzo mixture.
  8. Sprinkle with Parmesan cheese and parsley before serving.
