Creamy Alfredo Lasagna Soup

A warm and hearty dish that combines the flavors of classic lasagna with a creamy Alfredo twist.

Ingredients

  • 1 pound Italian sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 12 ounces lasagna noodles, broken into pieces
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup ricotta cheese
  • 1 tablespoon Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned.
  2. Add the chopped onion and garlic, and sauté until softened.
  3. Pour in the chicken broth and bring to a boil.
  4. Stir in the broken lasagna noodles, and cook until al dente.
  5. Reduce heat, and stir in the heavy cream, Parmesan cheese, and ricotta cheese until melted and creamy.
  6. Season with Italian seasoning, salt, and pepper. Simmer for a few minutes.
  7. Serve hot, garnished with fresh parsley.

Notes

  • This soup can be made ahead of time and reheated.
  • Add more broth if it thickens too much in the fridge.
