Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup wild rice
  • 1 medium onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons garlic powder
  • 1 teaspoon dried thyme
  • salt and pepper to taste

Instructions

  1. In a slow cooker, combine chicken, wild rice, onion, carrots, celery, chicken broth, garlic powder, and thyme.
  2. Cook on low for 6-7 hours or until the chicken is cooked through.
  3. Shred the chicken and stir in the heavy cream.
  4. Season with salt and pepper to taste, and cook for an additional 30 minutes.
