  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned. Drain excess fat.
  2. Add diced onion and minced garlic; sauté until translucent.
  3. Pour in chicken broth and diced tomatoes; bring to a simmer.
  4. Add ditalini pasta and cook until al dente.
  5. Stir in heavy cream and Parmesan cheese; mix until cheese is melted.
  6. Fold in fresh spinach and Italian seasoning; season with salt and pepper.
  7. Simmer for an additional 5 minutes before serving.
