  • 1 tablespoon olive oil
  • 1 pound Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • salt and pepper to taste
  • 2 cups spinach

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the sausage and cook until browned.
  2. Add the onion and garlic, and sauté until softened.
  3. Pour in the chicken broth and add the diced tomatoes, bring to a simmer.
  4. Add the ditalini pasta and cook according to package instructions.
  5. Stir in the heavy cream and Parmesan cheese, and cook until heated through.
  6. Add salt, pepper, and spinach, and cook until the spinach wilts.
