  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, and vegetable oil.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, baking soda, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fill muffin cups three-quarters full with the batter.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Let muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
