Easy Chicken, Poblano, and Black Bean Soup

  • 2 cups cooked chicken, shredded
  • 1 poblano pepper, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until softened.
  2. Add the chopped poblano pepper and cook for another 2-3 minutes.
  3. Stir in the cumin and chili powder, and cook for 1 minute until fragrant.
  4. Add the shredded chicken, black beans, and chicken broth; bring to a simmer.
  5. Let the soup simmer for 20 minutes to allow flavors to meld.
  6. Season with salt and pepper to taste, and serve hot.

Notes

  • For extra heat, add diced jalapeños.
  • Garnish with cilantro or avocado before serving.
