Elote Pasta Salad Recipe (Mexican Street Corn)

  • 8 ounces rotini pasta
  • 4 slices turkey bacon
  • 1 cup corn kernels (fresh or canned)
  • 1/2 cup diced red onion
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped cilantro
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and set aside.
  2. In a skillet, cook the turkey bacon until crispy. Crumble it once it’s cooled.
  3. In a large bowl, combine the pasta, corn, red onion, cherry tomatoes, feta cheese, cilantro, crumbled turkey bacon, mayonnaise, lime juice, chili powder, salt, and pepper.
  4. Toss until well mixed. Serve chilled or at room temperature.

  • This salad can be made ahead of time—just add the dressing right before serving to keep the pasta from becoming soggy.
