This delicious glow bowl features a variety of roasted veggies topped with a creamy tahini yogurt sauce.

Ingredients

  • 1 cup chopped bell pepper
  • 1 cup cherry tomatoes
  • 1 cup diced sweet potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup tahini
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon garlic, minced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the chopped veggies with olive oil, salt, and pepper.
  3. Spread the veggies on a baking sheet in a single layer.
  4. Roast for 25-30 minutes, stirring halfway through, until tender and golden.
