  • 150 grams brown sugar
  • 2 large eggs
  • 200 grams self-raising flour

  • 1/2 teaspoon sea salt
  • 200 milliliters heavy cream
  • 150 grams golden syrup

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, combine the pitted dates and baking soda, then pour the boiling water over them and let it sit for 10 minutes.
  3. In another bowl, cream together the butter and brown sugar until light and fluffy.
  4. Add the eggs, one at a time, mixing well after each addition.
  5. Stir in the flour, vanilla extract, and sea salt.
  6. Gently fold in the date mixture until combined.
  7. Pour the batter into a prepared baking dish and bake for 30-35 minutes until a skewer comes out clean.
  8. For the sauce, combine the heavy cream and golden syrup in a pan and heat until warm.
  9. Serve the pudding warm, drizzled with the toffee sauce.
