  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt

  • 1 egg
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, garlic, oregano, salt, pepper, and egg. Mix until well combined.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake for 20-25 minutes or until fully cooked.
  5. Meanwhile, cook the orzo in chicken broth according to package instructions. Drain and return to pot.
  6. Add lemon zest, lemon juice, olive oil, and parsley to the orzo; stir to combine.
  7. Serve meatballs over lemon orzo.
