  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup lemon orzo pasta
  • 4 cups chicken broth
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine ground chicken, breadcrumbs, Parmesan, parsley, oregano, garlic powder, salt, and black pepper.
  3. Form mixture into meatballs.
  4. Place meatballs on a baking sheet and bake for 25-30 minutes until cooked through.
  5. In a saucepan, bring chicken broth to a boil and add lemon orzo.
  6. Cook orzo according to package instructions.
  7. Stir in lemon juice and olive oil before serving.
