Hearty Cheddar Garlic Herb Potato Soup

A rich and creamy potato soup loaded with cheddar cheese, garlic, and herbs, topped with crispy turkey bacon.

Ingredients

  • 4 large potatoes, peeled and diced
  • 6 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 4 slices turkey bacon, cooked and crumbled
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the diced potatoes and chicken broth; bring to a boil.
  3. Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  4. Purée the soup using an immersion blender until smooth.
  5. Stir in the heavy cream and cheddar cheese until melted.
  6. Season with thyme, parsley, salt, and pepper.
  7. Serve hot, garnished with crispy turkey bacon.

Notes

  • For a thicker soup, reduce the amount of broth.
  • Feel free to add extra spices or vegetables as desired.
