Italian Grinder Bean Salad

  • 1 can (15 oz) kidney beans
  • 1 can (15 oz) chickpeas
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup cucumber, diced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 strips turkey bacon, cooked and crumbled

Instructions

  1. Rinse and drain the kidney beans and chickpeas.
  2. In a large bowl, combine the kidney beans, chickpeas, cherry tomatoes, red onion, cucumber, and fresh basil.
  3. In a separate bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and black pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Gently fold in the crumbled turkey bacon.
  6. Let the salad sit for at least 30 minutes to allow the flavors to meld before serving.

Notes

  • For added flavor, marinate the beans in the dressing for a few hours before serving.
