Italian Sausage and White Bean Soup

A hearty and comforting soup made with Italian sausage, white beans, and fresh vegetables.

  • 1 pound Italian sausage
  • 2 cans white beans, drained and rinsed
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 cups kale, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned.
  2. Add the onion, carrots, celery, and garlic, and cook until the vegetables are tender.
  3. Stir in the white beans, chicken broth, thyme, and rosemary.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add kale and cook until wilted.
  6. Season with salt and pepper to taste.

  • For a spicier soup, use hot Italian sausage.
