  • 3 pounds beef chuck roast
  • 1 tablespoon vegetable oil
  • 1 medium onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 teaspoons ginger, minced
  • 1 teaspoon black pepper
  • 2 green onions, chopped

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a large oven-safe pot, heat the vegetable oil over medium-high heat.
  3. Season the beef chuck roast with salt and pepper, then brown it on all sides in the pot.
  4. Remove the roast and set aside. In the same pot, add the onion and garlic, sautéing until softened.
  5. Add the beef broth, soy sauce, brown sugar, ginger, and black pepper, stirring to combine.
  6. Return the roast to the pot, cover, and transfer to the oven.
  7. Cook for 3-4 hours or until the meat is tender.
  8. Remove from the oven and let it rest before slicing and serving with the sauce.
