A delicious and comforting layered vegetable lasagna packed with Mediterranean flavors.

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup mushrooms, sliced
  • 2 cups spinach
  • 2 cups marinara sauce
  • 1 teaspoon Italian seasoning
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. In a skillet, heat olive oil and sauté onion and garlic until soft.
  4. Add zucchini, bell pepper, and mushrooms; cook until tender.
  5. Stir in spinach and marinara sauce; season with Italian seasoning.
  6. In a baking dish, spread a thin layer of the vegetable mixture, add a layer of noodles, and top with ricotta and mozzarella.
  7. Repeat the layers until ingredients are used, finishing with mozzarella and Parmesan on top.
  8. Bake for 25-30 minutes until bubbly and golden.
  9. Let cool for a few minutes before serving.

Notes

  • Let the lasagna rest for at least 10 minutes before slicing for cleaner pieces.
  • You can add more vegetables if desired.
