Marinated Vegetable Salad

Ingredients

  • 1 cup cucumber, diced
  • 1 cup bell peppers, sliced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup olives, pitted
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large bowl, combine the tomatoes, cucumber, bell peppers, red onion, olives, and parsley.
  2. In a separate smaller bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper.
  3. Pour the dressing over the vegetables and toss to coat.
