Mushroom And Spinach Lasagna Recipe

A comforting and easy-to-make Mushroom and Spinach Lasagna perfect for family meals.

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups fresh spinach
  • 2 cups mushrooms, sliced
  • 3 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a large skillet, sauté the mushrooms until soft. Add spinach and cook until wilted.
  4. In a bowl, mix ricotta cheese, garlic powder, and Italian seasoning.
  5. Spread a layer of marinara sauce in a baking dish.
  6. Layer noodles, ricotta mixture, spinach and mushrooms, marinara sauce, and mozzarella until all ingredients are used.
  7. Top with remaining mozzarella and Parmesan cheese.
  8. Bake for 30-35 minutes until heated through and cheese is bubbly.

Notes

  • Let the lasagna sit for 10 minutes before slicing for better pieces.
  • Feel free to add other vegetables like zucchini or bell peppers.
