No Bake Mini Biscoff Cheesecakes

A deliciously easy dessert that combines the flavors of Biscoff cookies with a creamy cheesecake filling, all without turning on the oven!

Ingredients

  • 12 Biscoff cookies
  • 4 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream
  • 1/4 cup Biscoff spread

Instructions

  1. Crush the Biscoff cookies and mix with melted butter. Press into the bottom of mini dessert cups to form the crust.
  2. In a bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla, mixing until combined.
  3. Fold in the whipped cream until the mixture is light and fluffy.
  4. Fill each cup with the cheesecake mixture and smooth the tops.
  5. Drizzle Biscoff spread over the top of each cheesecake.
  6. Chill in the refrigerator for at least 2 hours before serving.

Notes

  • For an extra crunch, sprinkle chopped Biscoff cookies on top before serving.
  • You can use any other cookies if Biscoff is unavailable.
