- 12 Biscoff cookies
- 4 tablespoons unsalted butter, melted
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup whipped cream
- 1/4 cup Biscoff spread
- Crush the Biscoff cookies and mix with melted butter. Press into the bottom of mini dessert cups to form the crust.
- In a bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla, mixing until combined.
- Fold in the whipped cream until the mixture is light and fluffy.
- Fill each cup with the cheesecake mixture and smooth the tops.
- Drizzle Biscoff spread over the top of each cheesecake.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
- For an extra crunch, sprinkle chopped Biscoff cookies on top before serving.
- You can use any other cookies if Biscoff is unavailable.
