1 1/2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1/4 cup granulated sugar
16 ounces cream cheese, softened
1 cup pumpkin puree
1 cup powdered sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1 cup whipped cream
Instructions
In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press the mixture into a baking dish.
In a large bowl, beat the cream cheese until smooth. Add the pumpkin puree, powdered sugar, vanilla, cinnamon, nutmeg, and ginger, mixing until well combined.
Fold in the whipped cream. Spread the mixture over the crust in the baking dish.
Refrigerate for at least 4 hours or until set. Cut into bars and serve.
Notes
For a spicier flavor, add more ginger or cinnamon.
Top with additional whipped cream before serving.
