Poor Man’s Husband Casserole

A delicious and budget-friendly meal featuring turkey bacon, perfect for a cozy dinner.

  • 6 slices turkey bacon
  • 1 can cream of mushroom soup
  • 1 cup frozen mixed vegetables
  • 2 cups cooked rice
  • 1 cup shredded cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the turkey bacon in a skillet until crispy. Chop into smaller pieces.
  3. In a large bowl, mix cream of mushroom soup, frozen vegetables, cooked rice, cheese, garlic powder, onion powder, and the cooked turkey bacon. Season with salt and pepper.
  4. Transfer the mixture to a baking dish.
  5. Bake for 25-30 minutes, or until heated through and bubbly.
  6. Serve warm and enjoy!

Notes

  • For a spicier version, add some crushed red pepper flakes.
  • Can substitute turkey bacon with regular bacon if preferred.
