Portobello Stuffed with Ham, Egg, and Guacamole

Deliciously stuffed portobello mushrooms with savory chicken ham, egg, and creamy guacamole make for a perfect dish.

Ingredients

  • 2 large portobello mushrooms
  • 100 grams chicken ham
  • 2 large eggs
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • 2 tablespoons chopped cilantro
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Clean the portobello mushrooms and remove the stems.
  3. In a pan, cook the chicken ham until browned.
  4. In a bowl, mash the avocado and mix in lime juice, cilantro, salt, and pepper.
  5. Fill each mushroom with the cooked ham.
  6. Crack an egg into each mushroom on top of the ham.
  7. Bake the mushrooms in the oven for about 20 minutes or until the egg is cooked to your liking.
  8. Top with guacamole before serving.

Notes

  • For added flavor, sprinkle cheese on top before baking.
  • Adjust the seasoning according to your taste.
