  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup pumpkin puree
  • 1 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a greased baking pan.
  3. In a separate bowl, beat cream cheese until smooth. Add pumpkin puree, sugar, eggs, and vanilla. Mix until well combined.
  4. Stir in cinnamon, nutmeg, ginger, and salt. Pour over the crust.
  5. Bake for 30-35 minutes or until set. Cool completely before slicing.
