- 6 large eggs
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 slices turkey bacon, cooked and crumbled
- 1/4 teaspoon paprika
- 2 tablespoons chopped chives
- 1 tablespoon sour cream
- yellow food coloring, as needed
- Hard boil the eggs by placing them in a pot covered with water. Bring to a boil, then cover and remove from heat. Let stand for 12 minutes.
- Transfer the eggs to an ice bath for 10 minutes to cool.
- Peel the eggs and slice them in half lengthwise.
- Remove the yolks and place them in a bowl. Add mayonnaise, mustard, salt, pepper, turkey bacon, paprika, chives, sour cream, and yellow food coloring. Mix until smooth.
- Fill the egg whites with the yolk mixture using a spoon or piping bag.
- Garnish with additional crumbled turkey bacon and chives if desired.
Notes
- Add additional spices to taste.
- Can substitute regular bacon for turkey bacon if preferred.
