  • 1 cup heavy cream
  • 1/2 cup milk
  • 3/4 cup sugar
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • pinch salt

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a saucepan, combine pumpkin puree, heavy cream, milk, and sugar. Heat over medium heat until steaming.
  3. In a bowl, whisk together egg yolks, vanilla, cinnamon, nutmeg, and salt.
  4. Slowly pour the hot pumpkin mixture into the egg yolk mixture, whisking constantly.
  5. Strain the mixture into ramekins.
  6. Place ramekins in a baking dish filled with hot water.
  7. Bake for 30-35 minutes, until set but still jiggly.
  8. Cool completely before serving.
