Raspberry Linzer Cookies

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 cup ground almonds
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup raspberry jam

Instructions

  1. In a large bowl, cream together the butter and sugar until light and fluffy.
  2. Add in the eggs, one at a time, beating well after each addition.
  3. Stir in the vanilla extract.
  4. In another bowl, sift together the flour, ground almonds, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Chill the dough in the refrigerator for at least 1 hour.
  7. Preheat your oven to 350°F (175°C).
  8. Roll out the dough and cut into desired shapes. Cut a small hole in the center of half the cookies.
  9. Bake for 10-12 minutes or until lightly golden.
  10. Once cooled, spread raspberry jam on the whole cookies and top with the cookies that have the hole.

Notes

  • For a twist, use other fruit jams instead of raspberry.
  • Keep the cookies in an airtight container for freshness.
