Rich Pecan Pie Bars with Pie Crust

  • ½ cup unsalted butter, softened
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 cup light corn syrup
  • 1 cup brown sugar, packed
  • ¼ cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups pecans, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, softened butter, and sugar until crumbly. Add the egg and mix until a dough forms.
  3. Press the dough into the bottom of a greased baking pan.
  4. In another bowl, combine corn syrup, brown sugar, melted butter, eggs, and vanilla. Mix well.
  5. Stir in the chopped pecans into the mixture.
  6. Pour the pecan mixture over the crust in the baking pan.
  7. Bake for 30-35 minutes or until set.
  8. Allow to cool before cutting into bars.

Notes

  • For a richer flavor, toast the pecans before adding them to the filling.
