Shepherd’s Pie Baked Potato

  • 4 large russet potatoes
  • 4 slices turkey bacon
  • 1 pound ground turkey
  • 1 cup frozen mixed vegetables
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/4 cup milk
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the russet potatoes, then bake for 45-60 minutes until tender.
  3. While the potatoes bake, cook the turkey bacon in a skillet until crispy. Remove and crumble.
  4. In the same skillet, add onion and garlic, and sauté until translucent. Add ground turkey and cook until browned.
  5. Stir in mixed vegetables, Worcestershire sauce, salt, and pepper. Cook for an additional 5 minutes.
  6. Once the potatoes are done, slice them open and fluff the insides with a fork.
  7. Add butter and milk to each potato, then top with the turkey mixture.
  8. Sprinkle cheese and crumbled bacon over the top, then return to the oven for another 10 minutes or until the cheese is melted.
  9. Serve hot and enjoy!

Notes

  • For extra flavor, add herbs like thyme or rosemary to the turkey mixture.
  • Substitute ground beef or vegetarian protein for the turkey if desired.
