Southwest Egg Rolls Recipe

A delicious and easy recipe for Southwest Egg Rolls filled with turkey bacon and chicken ham, perfect for a quick snack or appetizer.

  • 1 cup cooked chicken, shredded
  • 1/2 cup turkey bacon, cooked and chopped
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn, drained
  • 1/2 cup bell pepper, diced
  • 1/4 cup green onions, chopped
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 egg roll wrappers
  • 1 egg, beaten (for sealing)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the chicken, turkey bacon, black beans, corn, bell pepper, green onions, cumin, chili powder, salt, and pepper.
  3. Lay out an egg roll wrapper and place a generous spoonful of the filling on one corner.
  4. Moisten the edges with beaten egg, then fold and roll the wrapper tightly.
  5. Repeat with remaining wrappers and filling.
  6. Place the egg rolls on a baking sheet and spray with cooking spray.
  7. Bake for 20-25 minutes or until golden brown and crispy.

Notes

  • For extra flavor, serve with salsa or guacamole.
  • These egg rolls can be made in advance and frozen before baking.
