Stick of Butter Chicken and Rice

A delicious and comforting dish made with rich butter chicken served over rice.

  • 1 stick unsalted butter
  • 2 pounds chicken thighs
  • 2 cups basmati rice
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 cups tomato puree
  • 1 cup heavy cream
  • 2 teaspoons garam masala
  • 1 teaspoon chili powder
  • 1 teaspoon salt

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the diced onion and sauté until translucent.
  3. Add the garlic and ginger, cooking for another minute.
  4. Add the chicken thighs and brown on both sides.
  5. Stir in the tomato puree, cream, and spices, and simmer for 30 minutes.
  6. Meanwhile, cook the rice according to package instructions.
  7. Serve the butter chicken over the rice.

Notes

  • For extra flavor, marinate the chicken in spices overnight.
  • Add fresh cilantro as a garnish before serving.
