Strawberry Pink Marshmallows

Ingredients

  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/2 cup water
  • 2 large egg whites
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup pureed strawberries
  • 1 tablespoon powdered sugar

Instructions

  1. In a saucepan, mix sugar, corn syrup, and water. Bring to a boil and cook until it reaches 240°F.
  2. While the syrup is cooking, beat egg whites and salt in a bowl until stiff peaks form.
  3. Once the syrup is ready, gradually pour it into the whipped egg whites, mixing continuously.
  4. Add in strawberry puree and vanilla extract, and continue to mix until fluffy.
  5. Spread the mixture into a greased pan and allow to set for several hours.
  6. Once set, dust with powdered sugar and cut into squares.

Notes

  • For extra flavor, consider adding a few drops of pink food coloring.
  • These marshmallows can be stored in an airtight container.
