- 4 large sweet potatoes
- 1 cup burrata cheese
- 1/2 cup toasted walnuts
- 1 cup fresh sage leaves
- 1/2 cup olive oil
- 3 cloves garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork, then place them on a baking sheet.
- Bake for 45-60 minutes, or until tender.
- While the potatoes are baking, prepare the sage pesto by blending the sage, garlic, salt, black pepper, and olive oil until smooth.
- Once sweet potatoes are cooked, cut them open and fluff the insides with a fork.
- Top each sweet potato with burrata, toasted walnuts, and drizzle with sage pesto.
