Stuffed Sweet Potatoes with Burrata, Toasted Walnuts & Sage Pesto

  • 4 large sweet potatoes
  • 1 cup burrata cheese
  • 1/2 cup toasted walnuts
  • 1 cup fresh sage leaves
  • 1/2 cup olive oil
  • 3 cloves garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then place them on a baking sheet.
  3. Bake for 45-60 minutes, or until tender.
  4. While the potatoes are baking, prepare the sage pesto by blending the sage, garlic, salt, black pepper, and olive oil until smooth.
  5. Once sweet potatoes are cooked, cut them open and fluff the insides with a fork.
  6. Top each sweet potato with burrata, toasted walnuts, and drizzle with sage pesto.
  7. Serve warm and enjoy!
