  • 1 can black beans, drained and rinsed
  • 1 avocado, sliced
  • 1 red bell pepper, diced
  • 1 cup corn, fresh or frozen
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 large whole-wheat tortillas

Instructions

  1. Cook the brown rice according to package instructions.
  2. In a bowl, combine the black beans, avocado, bell pepper, corn, cumin, and chili powder.
  3. Lay a tortilla flat and add a scoop of rice and a generous portion of the filling.
  4. Fold the sides of the tortilla and roll it up tightly.
  5. Repeat with remaining tortillas and serve.
