  • 2 large eggs
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the pumpkin puree, softened butter, sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking soda, cream of tartar, cinnamon, nutmeg, and salt.
  5. Gradually stir the dry ingredients into the pumpkin mixture until just combined.
  6. Fold in the white chocolate chips.
  7. Drop by rounded tablespoons onto prepared baking sheets.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Allow to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
