- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar, packed
- 1 tablespoon ground cinnamon
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the flour, sugar, baking powder, baking soda, salt, and ground cinnamon.
- In another bowl, whisk together the melted butter, eggs, and vanilla extract.
- Combine the wet and dry ingredients until just mixed.
- In a small bowl, mix the brown sugar with the additional ground cinnamon.
- Fill each muffin cup halfway with the batter, sprinkle with the cinnamon sugar mixture, and then top with the remaining batter.
- Bake for 18-20 minutes until golden. Allow to cool before serving.
Notes
- For a sweeter muffin, you can add a glaze on top made from powdered sugar and milk.
- Great served warm with a cup of coffee or tea.
