Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar, packed
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, salt, and ground cinnamon.
  3. In another bowl, whisk together the melted butter, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed.
  5. In a small bowl, mix the brown sugar with the additional ground cinnamon.
  6. Fill each muffin cup halfway with the batter, sprinkle with the cinnamon sugar mixture, and then top with the remaining batter.
  7. Bake for 18-20 minutes until golden. Allow to cool before serving.

Notes

  • For a sweeter muffin, you can add a glaze on top made from powdered sugar and milk.
  • Great served warm with a cup of coffee or tea.
